
I read a lot of regular recipes online, and rarely have the drive to see if it will convert to something gluten free. If I am going to bake though, it must be gluten free!
Basically, it works like this. My husband is the one who needs to eat gluten free. For the kids and I treats are way more plentiful than is healthy.
Because of this, I live by 2 guidelines. Gluten containing foods must be pre-made, and if they are treats, they need to be on sale. If you think this will cause you a treats deficit, you’ll be surprised.
It will probably help you to save some money throughout the year if you weren’t already following similar rules.
This way of shopping helps me save money, and I don’t contaminate my bakeware. Since GF products can be so expensive, I either go to my local discounted grocery or head to Aldi’s.
I had stumbled across the concept for a Pumpkin Dump Cake when watching Minimal Mom. I am in the throws of trying to de-hoard my house, and her pumpkin dessert sounded wonderful and easy.
I did have doubts that it would work with gf ingredients though so I searched the internet and found a recipe at Gluten Free on a Shoestring.
I bought an Aldi liveGfree GF yellow cake mix, and followed the recipe almost to a tee. We did mix the top layer with the butter even though it calls for just dumping it in.
It made the top layer a pretty consistent texture, which you can see below. This did make it difficult to cut after it had been refrigerated, but it was so yummy that didn’t stop anyone from eating it.

I will definitely try the “pouring the butter over” method instead of mixing and see what happens next time. If it turns out more delicious than the 1st, all the better! You can see there were already so many yummy layers in the 1st go. Being able to see all the layers is why Pyrex baking dishes are fun.

The only other thing I did different with mine was that I used dark chocolate chips instead of the semi-dark that it called for. It’s what we like, I already had them at the house, and I thought they complimented the dessert perfectly.
Creative Streak
If you have wondered where all my craft posts have gone, I just want you to know I will be posting more regularly soon. I’ve been on hiatus while I figure out how to balance being the kids’ activity uber, and how to sort and remove things from my house, while keeping up with the regular chores.
I am exhausted, but on the plus side, I can see enough progress that I am motivated to keep going. My big goals are to make a beautiful room for my youngest and to make a nice space to film in my craft room.
I did some mending of this week and last. Just fixed my daughter’s princess nightgown and sewed buttons back on a few items. I also picked up my knitting again, I might finish the sweater this year!
I also put Dollar Tree Blue and White Wall Tiles up on my backsplash. Billy teased me because he can do real tile work, but I love it, it protects my wall, and all without me having to pay for real tile or commit to a design.

In all honesty, I do tend to stick to the blue and white patterns because it reminds me of my mom, and matches many of the things I love here.
Plus, our kitchen is now red, white, and blue. It sounds patriotic, but really, it might just be Buffalo Bills colors. Mom chose this color scheme here, and while it fits for Billy too, it’s ironic because she was a Steelers fan! Whatever the reason, seeing her things and the kitchen looking good makes me really happy.
I do recommend that if you cut the tiles, you should have some double-sided tape, or alien tape to fasten the cut side to the wall. The cut side will seperate from the adhesive and a little tape will keep it from coming off the wall and flapping in the breeze.
